BILLAUD-SIMON
Founded in 1815, Domaine Billaud-Simon lies at the heart of the historic Chablis appellation. Olivier Bailly has been the estate’s manager since 2015. Harvested with the utmost care, the grapes are vinified and aged at the Domaine. Alcoholic fermentation takes place in stainless steel tanks and/or oak barrels, depending on the appellation. The precision of our winemaking allows us to refine our use of barrels. The ageing period ranges from 12 to 15 months, depending on the appellation and the vintage. A hallmark of Chablis, Billaud-Simon boasts high-quality old vines, enhanced every day by the estate’s team.
Geographical location of Domaine Billaud-Simon
Located in the Burgundy region, on the terroirs of Chablis, Domaine Billaud-Simon extends over nearly 17 hectares of vineyards, where Chardonnay reigns supreme. The plots possess a geological particularity: they are composed of clay-limestone soils dating from the Kimmeridgian. These soils contain algae, shells, and marine sediments that are 155 million years old. The iodine present in the terroir gives Chablis white wines a unique character filled with minerality.

“Chablis of Gold and Light”
The estate currently boasts four Grands Crus: Les Clos, Vaudésir, Les Preuses, and Blanchots, as well as four Premiers Crus: Montée de Tonnerre, Fourchaume, Mont de Milieu, and Vaillons. It also produces Petit Chablis and Chablis, including the Tête d’Or cuvée. This prestige cuvée is made from a selection of the finest parcels planted in the village appellation.
