CHABLISIENNE
La Chablisienne brings together winegrowers who own vines in Chablis, and who blend their harvests and vinify their wines in the same place: the La Chablisienne cooperative. It's a household name in Chablis and around the world. The story of La Chablisienne began when a small group of winegrowers joined forces to face up to the economic situation of the time. It was in 1923, in the heart of Chablis, that La Chablisienne was created as a "cooperative cellar". La Chablisienne harvests the grapes in the form of must, a way of controlling vinification and offering the best of its terroirs. The winemakers and representatives of La Chablisienne are in constant dialogue, working together to produce wines that represent all the values of the Chablis vineyard and the purest expression of their terroir. These blends offer a mosaic of Climats that define the purest Chablis style.
Today, La Maison de la Chablisienne brings together 300 winemakers who exchange, share and contribute their knowledge to unite their passion and work in a single Maison.
Geographical location of the estate
The Chablisienne vineyards are located on both sides of the river "Le Serein", in the extreme north of Burgundy. The vineyard is composed of a single subsoil called Kimmeridgian, home to limestone beds and small comma-shaped fossil oysters ostrea virgula. The estate harvests grapes from 17 communes around the Chablis, Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru appellations.
Estate wines
The Chablisienne's sole grape variety is Chardonnay, which gives the wines purity and aromas of lemon and white flowers. World-renowned for their refinement, the House's cuvées all have the same mineral aspect, a consistently exceptional typicity.
The Petit Chablis appellation produces very fresh wines with notes of yellow fruit. Chablis tends towards a more pronounced finish and an even more mineral touch. Chablis Premier Cru gives structured wines with exceptional length on the palate. The older the vintage, the more floral notes emerge on the palate. These wines can be enjoyed young. Aging potential: 5 to 10 years. The Chablis Grand Cru appellation is made up of seven Climats, including Grenouilles, a reference to Château Grenouilles. On the palate, you'll find an explosion of fruit while retaining an elegant, mineral structure!
