LAMY HUBERT

Located in the heart of the Côte de Beaune, Domaine Hubert Lamy is a family-owned estate in Saint-Aubin, now run by Olivier Lamy and his wife Karine. The estate has built a strong reputation for its meticulous vineyard work and wines that faithfully reflect their terroir.

A family history rooted in Saint-Aubin

The family’s presence in the area dates back to 1640, but it was in 1973 that Hubert Lamy founded the estate as we know it today. The 1990s marked a turning point, with several plots purchased, leased or planted, some of them replanted with Chardonnay in sites considered particularly well suited to the variety.

Today, the estate covers 18.5 hectares, with Chardonnay accounting for 80% of production, making it the dominant grape variety for its white Burgundy wines. Olivier Lamy, a dedicated winegrower who places vineyard work at the heart of his approach, runs Domaine Hubert Lamy with his team, while Karine Lamy oversees management and sales.

A terroir shaped by the Côte de Beaune

The vineyards extend across Saint-Aubin and the neighbouring villages of Puligny-Montrachet, Chassagne-Montrachet and Santenay. The predominantly clay-limestone soils can be divided into three main types: white marl on the upper slopes, harder limestone in the middle sections, and Kimmeridgian limestone scree at the bottom of the slopes.

This diversity gives the estate’s wines distinct profiles from one plot to another. In the vineyards, Olivier Lamy uses massal selection, high-density planting and Poussard pruning, while favouring products approved for organic farming to protect the vines.

Winemaking dedicated to terroir

The grapes are harvested by hand, with around forty people taking part in the harvest each year. Each plot is vinified and aged separately in order to preserve its individual identity. The white grapes are slowly pressed before being aged in barrels, demi-muids, large oak vats or amphorae, with long fermentations using indigenous yeasts.

The red wines, made from Pinot Noir, are partially vinified with whole bunches before undergoing maceration for around two weeks. Both white and red wines are bottled after 24 months of ageing.

A range that reflects the terroirs of Saint-Aubin

Hubert Lamy’s wines cover a wide range of appellations from the Côte de Beaune, from village wines to Saint-Aubin Premier Cru, as well as cuvées produced in Puligny-Montrachet, Chassagne-Montrachet and Santenay. Saint-Aubin Chardonnay remains one of the estate’s signatures, while its red Burgundy wines, made from Pinot Noir, complete a range built around a faithful expression of terroir.

Domaine Hubert Lamy appeals to wine lovers looking for authenticity. Each cuvée reflects the care devoted to the vineyards and the respect for the Saint-Aubin terroir, from village wines and Premier Crus to some of the Côte de Beaune’s more confidential appellations.
