CELLIER AUX MOINES

In 2004, Catherine and Philippe Pascal acquired Domaine du Cellier aux Moines, located in Givry on the Côte Châlonnaise in Burgundy. They are assisted by Guillaume Marko, a young oenologist and technical manager since 2015. They are committed to restoring and safeguarding this jewel of winegrowing heritage. The history of the estate dates back to the 11th century. The monks of the Abbey of La Ferté received the Givry lands as a donation. They established a vineyard, cellar and wine press. In keeping with the Cistercian philosophy of "letting nature take its course", the Pascal family have been cultivating their vines according to the principles of biodiversity since 2006.

Domaine du Cellier aux Moines comprises 5 hectares of the famous Clos du Cellier aux Moines Premier Cru. Planted with Pinot Noir grapes in the middle and upper slopes, the parcels around the cellar have clay-limestone soil. There's also a small clos, forgotten for years and replanted in 2010: Clos Pascal. Parcels of Chardonnay have joined the estate to produce Premiers Crus white wines. Finally, recent plantings of Pinot Noir on the Givry hillside enable us to produce Givry Villages on the Gaurons hillside. The vineyards cover some ten hectares. Hand-picked Pinot Noir grapes, cultivation in small plots and total gravity vatting: these are the methods employed by the estate.

Domaine du Cellier aux Moines wines

Clos du Cellier aux Moines Givry Premier Cru is the flagship wine produced by the Pascal family. Considered one of Givry's very first crus, this fine wine is produced in exceptional vintages. In other Côte de Beaune communes, Domaine du Cellier aux Moines produces Chardonnay Premiers Crus white wines. These include Les Pucelles Puligny-Montrachet, Les Chaumées Chassagne-Montrachet and Santenay Beauregard.
