Domaine Bernard Defaix is one of Burgundy's oldest houses. In 1959, Bernard Defaix was already the 4th generation to rule this Burgundy vineyard. Today, his sons Sylvain and Didier manage the 27 hectares of organically grown vines. Since 2016, winters have often been harsh in Chablis. The Defaix sons have chosen to protect the vines from spring frosts. As a result, production remains constant for each vintage of organic Premiers Crus, including Les Lys and Les Vaillons, much appreciated by Chardonnay enthusiasts. The passion of these winegrowers extends to the cellar, where they preserve the characteristics of each terroir to the full.

Geographical location of Domaine Defaix Bernard

The commune of Chablis is located in northern Burgundy. Chablis is about 100 km from Beaune and very close to Auxerre. Chablis white wine comes from clay-limestone soil. The vineyards of Domaine Bernard Defaix are very stony. All AOC wines (Grand Cru Vaudesir, Premier Cru Côte de Lechet, etc.), bottled in the domaine's own cellar, come from parcels that receive plenty of sunshine.

Domaine Defaix Bernard wines

The Chablis and Petit Chablis produced by Domaine Bernard Defaix are 100% Chardonnay. Chablis Vieille Vigne is aged and vinified in oak barrels (25%). The vines are over 50 years old. In Chablis, three wines are classified as Grands Crus: Vaudésir, Les Clos and Bougros. Chablis Côte de Lechet, Les Vaillons, Fourchaume and Montée de Tonnerre are classified Premiers Crus.

Chablis Premier Cru Les Lys comes from vines located in Chablis and Milly. Premier Cru Les Vaillons is grown on Les Lys and Les Vaillons. The estate also produces a red Burgundy and a 100% Sauvignon Blanc on parcels further east.
