The Paring is a wine project from the California region. The idea is to use certain crops that don't meet the selection criteria of neighboring estates, The Hilt and Jonata. Matt Dees, the winemaker common to all three estates, vinifies these fruits following opportunities and his imagination. Matt has an instinct for vines and wines. For each grape variety, he finds combinations to create balanced wines synonymous with pleasure. Since 2006, Domaine The Paring has been producing white, red and rosé wines.

Geographical location of Domaine The Paring

Domaine The Paring is located in the Santa Barbara region of California. The vineyards extend over the Santa Ynez Valley, Santa Maria Valley and Santa Rita Hills terroirs. The vine varieties are numerous. Cabernet Sauvignon and Pinot Noir are used for red wine, while Sauvignon Blanc and Chardonnay are used for white wine. The arid soil of this region produces smaller-than-average fruit. However, it also offers great aromatic notes. The wines reflect Santa Barbara's sunny, windy oceanic climate.

Domaine The Paring wines

Domaine The Paring makes a red wine from a blend of Cabernet Franc, Cabernet Sauvignon, Merlot and Petit Verdot: Red Blend. On the palate, this wine offers notes of blackcurrant and chocolate. Matt Dees also creates a Syrah cuvée. The Paring also produces Pinot Noir, a supple red wine that pays homage to the French grape variety. A rosé wine is also made from Pinot Noir. The estate's white wines are made from Chardonnay and Sauvignon Blanc.
