Four generations have left their mark on Maison Pehu Simonet. Since the early 1900s, the House has continued to grow under a strong identity. David Pehu and Christine Fresnet work together to create structured Champagne wines.

Let us tell you about David Pehu... and his Champagnes! When you meet David Pehu, you wonder if you haven't bumped into him on a rugby pitch! But behind the man's sturdy build, all is gentleness and kindness! With his sparkling eyes, it's easy to see the smile behind the rigorous mask, and even more so when he talks about his Champagnes. David's philosophy reflects a small part of his Burgundian life. Nostalgic, perhaps, for his oenology studies in Burgundy... Applied to his work without taking himself (too) seriously, David lets us taste his different cuvées and explains how he works: brought up in the Burgundian way, initiated in 1988 to the vinification of the family estate's wines, then left alone at the helm since 1995, he likes to let his terroirs speak for themselves, accompanies them with the most appropriate ageing (barrels, concrete or stainless steel vats, depending on the grape variety and cuvée) and is committed to taking his entire estate organic! It's an approach that speaks to us, and one we're all the more delighted to see when he takes us on a tour of his "Fins Lieux"! Thanks to a traditional 4000kg Champagne press (made of wood), David perpetuates the traditional Champagne winemaking method.

Location of the estate

The Pehu Simonet family cultivates 7.5 hectares of vines, including 6 hectares of Grand Cru. The estate's vineyards cover the northern slopes of the Montagne de Reims, in Verzy, Verzenay, Mailly, Sillery and Le Mesnil. The family's vineyards benefit from a veritable mosaic of soils and subsoils composed of clay, green marl, limestone and sand. The result is wines with a wide range of flavors and character..

Estate wines

The domaine's wines are made from Pinot Noir and Chardonnay grapes. We really liked the Face Nord cuvée! Silky-smooth and fruity on the palate, with a well-balanced finish. Adopted! Let's talk about Fins Lieux... The best Pinot Noir lieux dits! Each cuvée in this range is produced in limited quantities.

Fins Lieux nº 1 comes from the "Les Pertois" plot in Verzenay. The nose opens with dried fruit aromas, which are repeated on the palate. A straightforward, controlled finish, just the way we like it. Fins Lieux nº 2 comes from the ". Les Crayères de la voie de Reims" in Verzenay. A full-bodied palate and a taut finish for an elegant, highly distinctive champagne! Fins Lieux nº 3 is rooted in the "Les Poules" plot in Mailly. A distinctly different champagne from its predecessors, delivering an unparalleled finish.
