The wines of Champagne Cazé-Thibaut are now in the hands of Fabien Cazé. He is part of a new generation of passionate and ambitious winemakers. Fabien's main assets are precise soil work and a thorough knowledge of the terroir. His philosophy is clear-cut: he seeks to understand the vines so that his wines reflect the pure expression of their terroir. The Cazé-Thibaut family has developed over 10 generations of winemakers. Roger Cazé was the creator of Champagne Cazé in 1953, and also the first to market the House's bottles of Champagne.

The winemaking process and the times have changed, leading Fabien to work the vines by hand from pruning to harvest, following each parcel precisely to ensure perfect vine growth. When Fabien took over the reins in 2007, he imposed a total ban on herbicides and pesticides, which led him to work organically. A few years later, he brought his first masterpieces to market. His spirit is strongly marked by respect for the soil and the notion of terroir. A passionate love of the vineyard, which gives his wines precision, elegance and precision. Geographical location of the estate

The Cazé-Thibaut estate is located in Châtillon-sur-Marne in the Marne Valley. The vineyards have their roots in Châtillon-sur-Marne and Vandières, covering just over two and a half hectares in the two villages on the right bank of the Marne. The plots in Vandières face south, while the terroirs in Châtillon-sur-Marne face east. Exposures that favor berry growth and perfect ripeness at harvest.

The estate's wines

The Champagnes remain highly expressive. The 2015 Les Fourches vintage is located on the chalky, sandy-clay soil of the Vandières terroir. Here, Chardonnay expresses all its freshness and density. Cuvée Les Leriens, on the other hand, draws its resources from clay-limestone soil on the Châtillon-sur-Marne terroir. Fine, elegant bubbles. Rosé Jossias is a cuvée with no added sugar. Produced from a plot of Pinot Noir, this cuvée's elderflower and rhubarb aromas lead to redcurrant flavors on the palate. A true Champagne de maître.
