Laurent and his son Adrien are at the helm of the Fernand and Laurent Pillot family estate in Chassagne-Montrachet, south of Beaune in Burgundy. Laurent represents the fourth generation of winemakers on the estate. He took over from his father Fernand, having worked with him since the 1990s. Together they developed the domaine, taking over the Pothier-Rieusset vineyard in Pommard in 2001.

Today, Domaine Fernand et Laurent Pillot produces white and red Burgundy wines in 22 different appellations. In 2021, it obtained HVE3 environmental certification, the highest level for this quality label.

Location of Domaine Fernand et Laurent Pillot

Domaine Fernand et Laurent Pillot is located on the southern slopes of Beaune, opposite the Saône plain. The 15 hectares of vines are divided between the historic family site and the domaine acquired in Pommard. The parcels thus extend over the communes of Chassagne-Montrachet, Puligny-Montrachet, Meursault, Saint-Aubin, Santenay, as well as Pommard, Volnay and Beaune further north.

Laurent and his son Adrien strive to produce their Burgundy wines in keeping with the traditions of the family's winemakers. They are also committed to cultivating their vines according to the principles of agrobiology, and to integrating modernity into their winemaking facilities.

Domaine Fernand et Laurent Pillot wines

Domaine Fernand et Laurent Pinot produces white Burgundy wines made from Aligoté or Chardonnay grapes. There are several Premiers Crus, such as Chassagne-Montrachet Premier Cru Vide-Bourse. This wine can be kept for 3 to 10 years. Chassagne-Montrachet Premier Cru Grandes Ruchottes is a white wine produced from vines located on a renowned enclave, which can be enjoyed after 4 to 5 years of cellaring.

For red Burgundy wines, Laurent and Adrien offer Premiers Crus like Beaune Premier Cru Les Boucherottes. This oak-aged wine, with its black fruit aromas, is best drunk between 4 and 15 years. The domaine also offers Pommard Les Charmots, a wine that improves with age. However, it can also be enjoyed young.
