The estate covers an impressive 30 hectares, nearly half of which are located in Grands Crus districts: 14 Grands Crus are in the heart of Champagne, in the villages of Oger, Mesnil sur Oger, Cumières and Verzenay. In all, there are more than 100 parcels, some of them to the south, at Les Riceys in the Aube. These vineyards now account for more than half of the House's supplies. The remainder is selected from growers whose plots are meticulously chosen and monitored by the Maison team.
The 3 grape varieties: 42% Pinot Noir, 29% Pinot Meunier and 29% Chardonnay. The grapes are harvested exclusively by hand, and then brought to the press as close as possible to the grape press, to limit the risk of transport damaging the harvest. The juice from the press is then transported to the winery in Reims. When it comes to vinification, the Champagne tradition is a given. At Bruno Paillard, only the first presses are kept for blending. The blends include between 25% and 50% reserve wines, kept either in vats or in small oak barrels.
These reserve wines are wines already blended from the previous year, themselves comprising 25% to 50% reserve wines from the previous year. This blending system ensures continuity and a Maison style from one year to the next. The wines are aged for 3 years for non-millésimés (or multi-millésimés, according to Bruno Paillard) and up to 8 to 12 years for vintage Champagnes.
